Behind the Scenes at Wynn — The Bread Shop
Executive Baker Johann Willar says the importance of Wynn's expansive bread portfolio is more than just soft, buttery, flaky, crunchy decadence. "It is the first impression at your table. It's the first impression of what your meal is going to be like, so we want it to be the best," he says.
At the Wynn Bread Shop, it is all about consistency, which gives the team of skilled bakers the ability to do 28,000 pieces of bread a day at peak time.
"On an average day we can do between 7,000 and 12,000 pieces a day, and that includes 200 different varieties available," Willar says. This year, they will make 4 million pieces and that's just the bread shop. Then, the Danish shop makes about 2 million pieces a year. All the bread is baked on property.
Using no preservatives, Willar shares the customer can be assured everything that goes into each slice is the very best.
Willar's best advice: "I would not eat bread the day after. I would eat it a couple of hours after it's done baking. You can see people smile when they get a nice piece of bread that's crunchy, or that's buttery. That's what I enjoy."
